How to Make It
- Make the dough. Bring water, ½ cup butter, 3 Tbsp sugar + salt to a boil in a large saucepan over medium-high heat, stirring occasionally.
- Add the flour. Remove from heat and stir in flour with a wooden spoon. Return to medium-low heat and stir constantly until the mixture forms a ball and leaves a film on the bottom of the pan.
- Add the eggs. Transfer dough to a large mixing bowl and cool 3 minutes. Add eggs one at a time, beating on medium speed after each addition.
- Heat the oil. Pour vegetable oil into a large Dutch oven to a depth of 3 inches. Heat to 360°F.
- Make the cinnamon sugar. Combine 1 cup sugar + cinnamon on a large plate.
- Pipe + fry. Transfer dough to a pastry bag fitted with a large metal star tip. Pipe 4-inch strips into hot oil and fry, turning occasionally, for about 4 minutes or until puffed + golden brown.
- Coat. Remove churros with a slotted spoon, drain on paper towels and roll warm churros in cinnamon sugar.
- Make the chocolate sauce. Heat heavy cream + remaining 2 Tbsp butter over medium-low heat until butter melts and bubbles form around the edges. Add chocolate and stir until melted + smooth.
- Fill the churros. Transfer dulce de leche to a piping bag fitted with a small narrow tip. Gently insert into the end of each churro and fill.
- Serve. Serve churros with warm chocolate sauce.
